Along the shores of Wakulla County, seineyards once came alive each fall with the hum of honest work and the scent of fresh-cooked fish. Locals would pack up for the season, living in humble shanties, rising with the sun to haul nets and salt down the day’s catch. It was a way of life—tough, communal, and deeply tied to the tides. Though the seineyards have faded into memory, the spirit of those times—of shared meals, local pride, and time-honored flavors—lives on in every plate we serve today.
